Bassam El Zein

In 1990, Bassam El Zein arrived in Toronto with a suitcase and hopes for a fresh start. The city was new to him, but he saw potential and knew it would take time to build something meaningful.

By 1999, Bassam had established a grocery store at the corner of King and Strachan, stocking shelves with the authentic flavors of Lebanon—sumac, olives, and freshly baked pita. For eleven years, this store became more than just a market; it was a community hub, where neighbors gathered, friendships were formed, and the familiar aromas of home filled the air. Yet, Bassam knew his journey was just beginning.

Liberty Shawarma was established by Bassam in 2010, alongside the rise and popularity of shawarmas in Toronto.

In 2010, Bassam closed the doors to his grocery store and opened the first Liberty Shawarma in Liberty Village.

In 2011, the doors opened on Spadina Avenue, welcoming students, professionals, and night owls seeking comfort in every wrap. 2014 brought Liberty Shawarma to Queen Street West, where artists, creatives, and locals found flavor and familiarity. And in 2022, Bassam returned to King Street, not far from the corner where his grocery store first stood—a full-circle moment that reflected the journey from market shelves to shawarma wraps.

A Family Behind the Counter

What makes Liberty Shawarma truly special isn’t just the food, it’s the people behind it. Many of the staff have worked with Bassam for over five years, with some staying for more than a decade. They’ve become the faces of Liberty Shawarma, greeting regulars like old friends.

One of our loyal customers explains that “I’ve seen the same person fold my shawarma for seven years. It’s like catching up with an old friend every time.” This is what Liberty Shawarma is about; a place where meals are shared, memories are made, and everyone feels at home.
